4 eggs
6 fluid ounces of milk
salt to taste
pepper to taste
nutmeg ground, optional to taste
12 ounces of flour
butter as needed

Directions:

boil a large pot of water
1. combine eggs,milk, and seasonings in a large bowl, mix well
2. work in the flour by hand
3. let the dough rest for 10 minutes
4. using a spatzel machine or other method drop the dough into a large pot of boiling water simmer until done
5. remove the spatzel with a spider and shock in cold water
6. saute the spatzel in whole butter, season to taste with salt and pepper, and serve
