4 boneless and skinless chicken breasts, 1/2 lb each
1/3 cup olive oil
juice of 3 limes
4 cloves of garlic, peeled and minced
3 tbsp fresh chopped (or 1 tbsp dried) cilantro
1/2 tsp each of salt and pepper
red and yellow peppers, roasted (optional)

Trim fat from chicken breasts and cut out middle tendon. Pound between waxed paper to flatten slightly. Combine olive oil, lime juice, garlic, 2 tbsp cilantro, salt and pepper in a bowl. Pour over chicken and marinate for 1 hour. Grill or broil the chicken breasts for 2 minutes on each side. Remove to platter. Sprinkle with remaining cilantro and serve with roasted red and yellow peppers.
