20 small red potatoes
1 1/2 T. olive oil
salt and pepper
4 T. minced fresh rosemary or 2 T dried
1/2 c finely chopped scallions

Directions:
Directions:
Place whole potatoes in a baking dish large enough to hold them in a single layer. Sprinkle with olive oil, shaking the pan so the oil coats all sides of the potatoes. Sprinkle with salt, pepper, and rosemary, shaking pan to cover potatioes with seasonings. Bake at 400º for 45 minutes. Sprinkle with scallions before serving.
