1 gal. chopped tomatoes
1/2 gal. diced potatoes
3 cups chopped onions
2 or 3 chopped jalapenos
6 cups whole kernal corn
5 cups sliced carrots
okra (not too much, or it will be slimey) app,.5 pods

Directions:
Directions:
Peel and cut up tomatoes in the largest size stainless steel bowl. Add onions, potatoes, peppers, corn, carrots, and okra. This should almost fill the large stainless steel bowl. Adjust ingredients to your taste. These are all approximate amount of ingredients.
Heat to boilig.
Sterilize jars and fill with soup Add 1 tsp. salt to each jar. Put lid and seal on jar, screw on tight, and place in pressure cookeer. Bring pressure up to 10 pounds for 30 minutes. Turn off heat and let pressure go down. Carefully remove jars of soup from the cooker and place on a towel to cool. Cover jars with another towel. Listen for the jars to pop as they seal. After jars have cooled, check to make sure all jars have sealed. Store in cool place until ready to serve. To prepare to eat, just open jar, put in pan and bring to a boil. DELICIOUS!!!

I always made this soup every summer using the vegetables that Arlie raised in his garden. I would just use whatever I had available at the time. The amount of peppers is up to you. If Arlie was helping me cut up the vegetables, he always thought "a few" more would be better. However, the temperature of those jars he helped with might require a little more cornbread to go with it than the ones I did by myself. This soup makes a good meal with just cornbread and butter to go with it.
