10 Zweiback (crushed)
2 Tbsp sugar

1 lb. creme cheese
2/3 c. of sugar
3 Tbsp of cornstarch
1/8 tsp of salt
2 eggs yolks
2 eggs
1-1/2 cups of heavy sweet cream
3 Tbsp fresh lemon juice
1 tsp vanilla

Directions:
Directions:
Butter a 7-inch or 80 inch spring form pan with one tablespoon
of butter. Mix together remaining butter, zweiback, and sugar.
Press mixture in bottom of pan. Set aside. Preheat oven to
300º F. Place a pan of hot water on the bottom rack of the
oven.

Beat cheese, sugar, cornstarch and salt together until very
smooth. Add egg yolks and eggs, one at a time, until very
smooth; then add sweet cream, lemon juice, and vanilla. Pour
the cheese mixture into the prepared spring form. Place on
oven rack just above the middle of the oven, over the rack
with the pan of water. Bake for one hour and turn off oven.
Allow cake to cool in the oven for at least two hours more.
Remove cake to a rack, but do not remove from the pan until
thoroughly cooled.
