4 rib pork chops, 3/4 inches thick
1 tbsp vegetable oil
1 can pineapple chunks and juice
1/4 cup Heinz ketchup
1/4 tsp salt
1 small onion, sliced
1/8 tsp pepper
1 medium green pepper, cut into 1-inch chunks
1/2 cup water
2 tbsp corn starch

In large skillet, quickly brown pork chops in vegetable oil. Drain excess fat.

Combine pineapple and its juice with ketchup, salt, onion, and pepper. Pour over chops. Cover and simmer 10 minutes.

Turn and baste chops. Stir in green pepper. Cover and simmer 10-15 minutes longer, or until chops are tender.

Thicken sauce with water and corn starch.

Makes 4 servings.

Also works well with skinless chicken breasts.
