Simple breading: rinse the seafood with cool water, coat it with seasoned self-rising flour, dip it into a mixture of 1 cup milk mixed with beaten egg, and then roll in flour again. Heat oil for pan-frying, cooking time will vary with species, temperature, and thickness of fish or shellfish. Breading turns golden brown and fish white in center. For baking fish dip seafood in bottled salad dressing, and roll in crumbs. Any kind, bread, cracker, corn chips etc. Cook baked fish at 450 to 500º. Check for doneness 15 to 20 minutes.
