3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 tsp. vinegar
1 tbsp. cinnamon
Optional: dates, raisins or nuts.

Bake at 325 for 1 hour. Makes 2 loaves.
