1 1/4 cups sifted flour
3 tsp. baking powder
1/2 tsp. salt
1/3 cup sugar
1 cup bran cereal
1 cup milk
1 egg
1/4 cup margarine, softened

Directions:
Directions:
Sift together flour, baking powder, salt, and sugar. Combine bran cereal and milk in another bowl, and let stand for 1-2 minutes until most of the liquid is absorbed. Add egg and margarine to bran/milk mixture and beat well. Stir in the dry ingredients only until just combined. For extra flavor, add 1/2 cup of any of the following: chopped apple, blueberries, raisins, flaked coconut, nuts, or dried fruit. Pour batter into 12 greased 1 1/2 inch muffin pan cups. Bake at 400 for 25 minutes or until golden brown.
