2 lbs small potatoes
1/2 onion (diced )
1 stick celery(diced)
2 eggs
1/3 c sweet pickle relish
2 eggs
1/2 c. mayonnaise or salad creme
1 tbs Dijon mustard (or to taste)
salt
pepper
garlic powder
paprika

Directions:
Directions:
Wash potatoes and cut them into eight pieces. Cover with water and add some salt. Place the eggs in the pot with the potatoes. Bring to a boil, reduce heat and simmer until potatoes are fork tender. Remove th eeggs and place them in ice water to cool. Drain the potatoes. In a large bowl, combine the mayonnaise, sweet relish, mustard, onions, and celery. Mix well. Add the potatoes and stir gently. Coarsley chop th eeggs and add them to the potatoes. Add seasonings to taste, and gently fold everything together. Sprinkle a little extra paprika on top for color.
