1 fryer chicken
2 cups plain flour
4 cups lard
2 eggs
1/2 c milk
salt
pepper
garlic powder
hot sauce

Directions:

Cut fryer into pieces. Cut the wings into two pieces. Season chicken liberally with salt, pepper and garlic powder. Cover and refrigerate at least two hours, preferably overnight.
Heat the lard in a cast iron fryer over medium heat.
Beat the eggs and milk in a shallow pan, add hot sauce to taste and mix well. Put the flour in a bag and season lightly. Coat the chicken in the egg mixture. Then put them in the bag and shake to coat them with the flour. Gently place the chicken in the hot lard and fry over medium until it is a dark golden brown and done. Drain on paper towels.
