1 chocolate cake mix
1/2 to 1 c. finely shredded carrots


Filling:
4oz. cream cheese
2 T. butter
1 1/2 c. powdered sugar
1 tsp. vanilla
1/4 tsp. orange zest
1/4 c. mini semi-sweet chips

Directions:
Directions:
Mix cake as directed on box and then add finely shredded carrots. Bake as directed and cool completely. For the filling beat cream cheese and butter together until fluffy and then add remaining ingredients. Put filling in a zip lock bag with a corner cut out (or cake decorating bag) to fill the cupcakes. Cut a quarter size cap out of the top of the cake and fill with filling and then replace the caps. Frost the top of the cupcakes with chocolate frosting.
