1 1/2 c. all-purpose flour
1 1/4 tsp. cinnamon
3/4 tsp. baking soda
1/2 tsp. nutmeg
1/2 c. butter
1/3 c. packed light brown sugar
1/2 c. granulated sugar
1 large egg
3/4 c. grated carrots
1/2 c. finely chopped walnuts
2/3 c. white chocolate (vanilla) chips

Directions:
Directions:
Mix flour, cinnamon, baking soda, and nutmeg. Cream butter, sugars, and egg. Mix carrots into butter mixture, then mix in dry ingredients just until blended. Stir in nuts and vanilla chips. Drop by teaspoonfuls on ungreased cookie sheets. Bake at 350º for 12-14 minutes. Cool slightly before removing to cooling racks. About 4 dozen small cookies.
