1 lb. ground beef
4 c. water
1 can (14 1/2 oz.) diced tomatoes, undrained
3 medium carrots sliced
2 medium potatoes peeled and sliced
1 medium onion chopped
1/2 c. chopped celery
4 beef bouillon cubes
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dried oregano
1 c. fresh or frozen green beans
Shredded cheddar cheese

In large pan over medium heat, cook beef until browned. Drain any fat. Add the next 20 ingredients, bring to a boil. Reduce heat, cover and simmer for 15 minutes or until potatoes and carrots are tender. Add beans. Cover and simmer until beans are tender.
Top with shredded cheddar cheese when you serve it.

Yields: 2 quarts of soup. I usually double and freeze 1/2 of it.
