1 tablespoon olive oil
3 small onions, chopped
4 teaspoons garlic granules
2 large carrots, diced
4 teaspoons cumin
salt to taste (optional)
1 red bell pepper, diced
4 15 ounce cans of black beans, drained
1 can orange juice concentrate
1 can of water
1/2 teaspoon cayenne pepper, or to taste

Directions:
Directions:
Heat olive oil in large pan over medium heat. Add onion, 2 teaspoons of garlic and carrots. Season with cumin & salt. Cook, stirring until carrots are tender. Stir in remaining garlic & red pepper, cook until tender. Add beans, water and orange juice and season with cayenne. In a blender puree part or all of the soup depending on the texture you want. Return to the pot, and simmer 10 more minutes.
