3-4 cans white or navy beans
2-14.5 ounce can diced tomatoes
2 onions, chopped
6 cups chicken or vegetable stock
1-7ounce package dried apricots
2 tablespoons garlic powder
2 teaspoons each thyme & cumin
2 tablespoons lemon juice
black pepper to taste

Directions:
Directions:
Drain the beans and combine with the other ingredients in a large pot. Bring to a boil and simmer for 30 minutes. Puree 1/2 of the soup in a blender and return to the pot.
