1 lb. dry beans (2 1/2 cups)
2 qt. cold water
1 1/2 lb. meaty ham bone
6 whole black peppers
1 bay leaf
1 med. onion

Directions:
Directions:
Thoroughly wash beans. Cover with water; bring to boil and boil gently for 2 minutes. Remove from heat; cover and let stand 1 hour. Do not drain. Add ham bone, pepper, bay leaf. Cover and heat to boiling. Boil gently till beans are tender, about 3 to 3 1/2 hours. Add onion during the last half hour of cooking. Before serving remove ham bone. If desired, mash a few of the beans with a potato masher. Cut ham from bone and return meat to soup. Discard ham bone.
