"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Blend in a pan the sugar, flour, gelatin, and salt. Cook over medium heat until mixture boils, stirring constantly. Boil 1 minute. Place pan in cold water. Cool until mixture mounds slightly when dropped from a spoon.
Blend in vanilla and almond flavoring.
Beat 3 eggs whites until stiff and add cream of tartar and gradually add 1/2 cup sugar. Beat until meringue is stiff and fluffy. Fold into cream mixture. Add 1 cup of coconut. Whip 1/2 cup of whipping cream and add to the mixture. Put in a baked pie shell. Top with crushed strawberries.
This is a lovely pie and with the strawberries it is festive. It is a Holiday treat.
