2 c. cubed cooked chicken
c. chopped red bell pepper (about 1 small)
c. chopped cucumber
c. shredded mozzarella cheese (2 ounces)
c. mayonnaise or salad dressing
2 tsp. chopped fresh or tsp. dried oregano leaves
1 can (4 1/2 ounces) chopped ripe olives, drained
1 loaf of French bread, sliced.

Directions:
Directions:
Set oven control to Broil. Mix all ingredients except
French bread. Spoon chicken mixture evenly between
bread slices. Place on un-greased cookie sheet. Broil
with tops 4-6 inches from heat about 5 minutes or until
hot.

This sandwich also makes a great appetizer by putting
the mixture on baguette bread slices and broiling.
