1 cup barley flour
1/4 tsp. nutmeg
1 tsp. vanilla
3/4 cup milk
1 1/4 cup blueberries
2 tsp. baking powder
1 egg
2 Tbs. concentrated fruit sweetner

Directions:
Directions:
In a medium bowl, combine the flour, baking powder, and nutmeg. Add the egg, vanilla, and fruit sweetner and mix again. Gradually stir in the milk and beat until the batter is smooth. Drop the batter, 1/4 cup at a time, on to a hot oiled skillet and generously sprinkle with blueberries. Cook each pancake over medium-high heat until bubbles appear all over the top and the bottom is golden brown. Turn pancakes over and cook the other side.

Serve immediately with fresh fruit and some fruit-sweetened blueberry jam or honey.
