Gingerbread with Lemon Sauce Recipe

2 1/3 c flour
1/3 c sugar
1 c molasses
c hot water
c shortening
1 egg
1 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
tsp salt

Lemon Sauce:
c sugar
2 Tbsp cornstarch
1 c water
2 Tbsp butter
1 Tbsp grated lemon peel
1 Tbsp lemon juice

Heat oven to 325. Grease and flour 9x9 pan. Beat all ingredients in large mixer on low speed, scraping bowl constantly for 30 seconds. Beat on medium, scraping bowl occasionally for 3 minutes. Bake for 50 minutes or until toothpick inserted near center comes out clean. Mix sugar and cornstarch in saucepan. Stir in water, gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute and remove from heat. Add lemon juice and zest. Top cake with Lemon Sauce and/or whipped cream.
