2 large bunches of fresh collard greens
1/4 lb of bacon
1 ham hock
1/4 lb of breakfast sausage
1/4 cup of chopped onion
salt and pepper to taste
1 Tbsp of brown sugar

Directions:
Directions:
Wash and clean the greens, breaking of the tough stems. You will just have the green leaf part of the collards left. Cut the collards in small pieces. Place in colander to drain. Fry the bacon and sausage until brown. Add the onion and saute until the onions are caramelized. Add the greens and enough beef or chicken broth to cover and add the ham hock. Add the seasoning and sugar. Bring to boil and reduce heat to simmer and cook greens for several hours, continue to cook until the ham hock is done and falling apart. Add water if you need to to prevent them from cooking dry.
