2 pounds ground beef
1 cup water
2 Tbsp. Tender Quick
1/4 tsp onion powder
1/4 tsp. garlic powder
2 tsp. liquid smoke
2 Tbsp. cracked pepper

Directions:
Directions:
Mix all ingredients together. Shape into several long rolls. Wrap in plastic wrap and place on a baking sheet or in a casserole dish. Let set 24 hours or longer in the refrigerator. Unwrap the rolls and put on a rack that has been placed on a baking sheet, so the grease will drip down while baking. Bake in a 300º oven for 1 1/2 hours. After the rolls have been baked, wrap in plastic or foil and keep refrigerated.

I usually make this summer sausage during the holidays. It can be made up ahead of time and will be ready to take to holiday parties. It can be sliced and put on a tray with cheese and crackers. You have a quick and easy tray to take along.
