1 c. all-purpose flour
1 1/2 tsp. baking powder
2 T. sugar
1/2 tsp. salt
2 eggs, separated
3/4 c. milk
Pam cooking spray or unsalted butter, for frying

Directions:
Directions:
Sift the flour, baking powder, sugar and salt into a bowl. Put the egg yolks and milk into another bowl and gently beat in the sifted dry ingredients. Put the egg whites into a clean bowl and beat with a wire whisk until stiff peaks form. Using a metal spoon, fold them into the batter. Heat prepared griddle or skillet over medium heat. Pour 1 tsp. (I also make regular sized pancakes with this mix) into pan and cook until done.
