½ c butter
2/3 c sugar
2 eggs
1 c buttermilk (You can use buttermilk powder, follow instructions on the can)
½ tsp baking soda
1 c yellow cornmeal
1 c flour
½ tsp salt

Directions:
Directions:
In a 3 quart pan, melt butter over medium heat. Remove from heat and stir in sugar. Add eggs and beat until well blended. Combine buttermilk and soda and stir into butter mixture. Add cornmeal, flour, and salt: mix just until blended. Pour batter into a greased 8" square pan. Bake at 375º for 30 minutes or until bread begins to pull away from sides of pan.

This is a sweet cake like cornbread that my family loves with honey or syrup. You can double the recipe and bake it in a 9"x13" pan. YUM!
