1 lb Orzo Pasta
5 tbsp. fresh lemon juice
3/4 cup olive oil
½-3/4 cup pine nuts toasted
1 ¼ cups feta cheese (6 oz.) crumbled (May use all 8 oz if preferred. Also, garlic and herb or tomato and herb feta is good
1 cup thinly slice scallion greens


Other alterations
I have also added 2/3 cups chopped sun-dried tomatoes.
30 kalamata (greek) olives chopped
2/3 cup chopped artichoke hearts (in oil) drained.
Plus ½ tsp each salt and pepper

Cook orzo in 6 to 8 quart pot of boiling salted water until tender, then drain well in a colander.

Whisk together lemon juice, oil, salt and pepper to taste in a large bowl. Then add hot orzo and toss. Cool orzo, then toss with pine nuts, feta and scallion greens. Season with salt and pepper.

Toast pine nuts in a shallow baking pan in a 350*F oven until golden, 5 to 10 minutes.
