2 tbsp. Oil
1 Medium Onion choppes
1 stalk of Celery sliced
3/4 diced Green Pepper
2 cloves Garlic minced
1- 8oz. can diced stew tomatos (Italian)
2- 13 3/4 oz can Chicken Broth
1/4 tsp. Thyme
1/4 tsp. Salt
1/8 tsp. Pepper
1/4 c. Long Grain White Rice
1 c. diced cooked Chicken

Directions:
Directions:
Large saucepan heat oil. Add onion, celery, green pepper, and garlic. Saute 3-5 minutes. Add tomatoes, broth, thyme, salt, pepper, and rice; bring to boil. Reduce heat, cover, and simmer 15 minutes. Add chicken and simmer 5 minutes or until rice is tender, and soup is heated through. Garnish with chopped parsley if desired.
