2-1/4 cups chopped dates
1 cup white sugar
1 cup water
1 cup shortening
2 cups brown sugar
3 well beaten eggs
4 cups (or a little more) flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda

Directions:
Directions:
Combine the dates, white sugar and water. Cook for 10 minutes over low heat; remove from heat; add 1 cup chopped nuts and let cool. Cream together the shortening, brown sugar and eggs. Sift together the clour, baking powder, salt and baking soda. Stir into creamed mixture. Roll out as in jelly roll. Spread cooled date/nut mixture on top and roll up. Wrap in waxed paper and put in refrigerator to cool. Slice in about 1/4" thickness and bake on greased cookie sheet at 375º for 8-10 minutes. (You can freeze rolls by wrapping them in waxed paper and foil wrap and then back them as you desire.)
