2 cups water,
1 cup uncooked long grain rice,
1 tbsp. Wylers or Steers chicken flavored bouillion cubes,
1 - 16 oz. container sour cream at room temp.,
1 1/2 cups shredded colby cheese,
1 cup shredded monteray jack cheese,
1 can green chilis(4 oz),
1/2 cup chopped red bell pepper,
1/8 tsp. pepper.

Preheat oven to 350º. In medium saucepan, combine water, rice and bouillion. Bring to a boil. Reduce heat, cover and simmer 15 min. or until rice is tender. In large bowl, combine all ingredients except 1/2 cup colby cheese. Mix well. Turn into buttered 1 1/2 qt. baking dish. Bake 20 - 25 min. Top with remaining colby cheese and bake 3 min. longer until cheese melts. Let stand 5 min.
