1 c flour
2 Tbsp sugar
c butter
Water to form dough ball

1 lb cream cheese
1 c sugar
2 c sour cream
9 oz melted white chocolate
4 egg whites
Pinch cream of tartar
1 tsp powdered sugar
1 tsp vanilla

Mix flour, sugar and butter until crumbly. Add enough water for dough to form a ball. Press into the bottom of a large spring form pan and bake at 325 for 5 minutes. Whip cream cheese until smooth and slowly add sugar, beating until smooth. Add sour cream and beat again. Add chocolate and beat again. Add vanilla and gently fold in egg whites. Pour mixture over crust and return to oven for 45 minutes. Turn off oven and open door partway. Leave cheesecake in oven for about 1 more hours. Then refrigerate for at least 24 hours. Wonderful topped with raspberries.
