Ingredients: 1 c butter, softened (or 1/2 shortening and 1/2 butter for fluffier cookies) ¾ c brown sugar (use light brown for a milder flavor and dark brown for a fuller flavor) ¾ c sugar 2 eggs 1 tsp vanilla (or try ½ tsp orange, mint, etc and ½ tsp vanilla) 1 tsp baking soda 1 tsp salt, scant 2 c flour 2 c rolled oats 2 c chocolate chips 2 c chopped nuts, optional

Directions:Cream sugar, butter and shortening. Add eggs and beat until fluffy. Stir in vanilla, soda and salt. Mix in flour and oats and fold in chocolate chips and nuts. Drop by tablespoonful on greased cookie sheet, and bake at 350° for 12 - 15 minutes, or until light brown. OPTIONS: Sometimes I mix the dough and put out a variety of additions to allow the kids to make custom cookies. These additions include Craisins, golden raisins, raisins, a variety of chopped nuts, semi-sweet chocolate, coconut, milk chocolate, white chocolate, toffee pieces, butterscotch chips, peanut butter chips, flavored chocolate chips, etc. Some of my favorite combos include white chocolate and Craisins (use light brown sugar); chocolate, raisins and nuts; milk chocolate (no nuts and light brown sugar) with ½ tsp mint extract and ½ tsp vanilla extract; dried fruit, nuts and coconut (using light sugar and ½ tsp orange flavor and ½ tsp vanilla); and semi-sweet chocolate and pecans (using dark brown sugar). Be creative. Chopped candy bars can also be used. |
