"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Pam's French Silk Hot Chocolate, by Kimberlee Roth, is from The Hart Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
2½ oz unsweetened baking chocolate ½ c water 1 c sugar Dash of salt ½ pt whipping cream
Melt the chocolate in the water and stir until it is thick and creamy. Add sugar and salt and cook for 4 minutes while stirring (don't boil this). COOL the mixture. Then whip cream until it is quite stiff. Fold in with chocolate mixture. Place in a container and refrigerate. To prepare, pour a mug of warm milk and add two or three heaping tablespoons to make a foamy, rich chocolate drink.
Pam makes this for Holiday gifts. This must be refrigerated but it is soooo good and makes a creamy cup of hot chocolate. It is good enough to eat by the spoonful.
