Select small young beets
2 C. sugar
2 C. water
2 C. strong vinegar
1 tsp. cloves
1 tsp. allspice
1 Tbsp. cinnamon

Directions:
Directions:
Cook beets until tender, dip into cold water and peel off skins. Do not cut the stems too short when preparing to cook, or they will bleed and lose their color.
Make a syrup with the sugar, water, vinegar, cloves, allspice, and cinnamon. After these ingredients are mixed together and hot, add the beets and boil 10 minutes. Pack into sterilized jarrs and seal at once. It is recommended that the jars be placed in a boiling water bath for 10 minutes.
