Ingredients:
Ingredients:
½ c evaporated milk
1/3 c flour
2 Tbsp sugar, divided
½ tsp baking powder
1/8 tsp salt
3 eggs, separated
2 Tbsp orange juice
1 tsp orange zest
1 medium apple, cored and sliced in thin slices
1 Tbsp cinnamon sugar

Directions:
Directions:
Lightly spray ovenproof 10” skillet (I use a cast iron fry pan). Place in oven at 375º for 10 minutes to heat the pan. Meanwhile, in a blender mix milk, flour, ½ the sugar, baking powder, salt, egg yolks, orange juice, and zest. Blend until smooth. Set aside. In large bowl, beat egg whites until soft peaks form. Gradually add remaining sugar, beating to form stiff peaks. Fold in milk mixture and pour batter into hot skillet. Arrange apple slices in a spoke pattern on top of pancake. Sprinkle with cinnamon sugar and bake at 375° for 10 - 5 minutes. Serve immediately. My kids like syrup on this pancake.
