8 eggs
2 c flour
1 c milk
1 c water
1 tsp salt
¼ Tbsp butter, melted
½ c sugar
2 tsp vanilla

Directions:
Directions:
Mix all but flour in a blender. SLOWLY add the flour and mix well. Strain through sieve to remove all lumps. Heat a crepe pan on medium high heat. Pour ¼ c batter into a hot, greased pan. Cook until top is bubbly and has started to cook. Flip and brown lightly on other side. Keep cooked pancakes warm until serving. My family likes pancakes served by buttering each pancake and sprinkling with 1 Tbsp powdered sugar. Then roll the pancake and drizzle with maple syrup. They are also very good with butter and jam.
