1/2 onion, diced
1 celery stalk, diced
1/2 tbsp. oil
1 1/4 c. mashed potatoes
1 c. cooked rice
1/4 c. tomato paste
1/2 tsp. salt
1/2 c. bread crumbs
1/4 c. parmesean cheese

Directions:
Directions:
Preheat oven to 350. Combine all ingredients. Form into 1 1/2" balls. Bake on greased cookie sheet on top rack for about 20 minutes.
