1 smoked turkey breast (could use other smoked meat or plain meat with a little liquid smoke, if necessary)


1/2 c frozen spinach, thawed
4 oz slice fresh mushrooms
1/2 c chopped onion
1/4 c butter
6 oz cream cheese
2 c cream (evaporated skim works well too)
1 lb pasta, cooked and drained
Salt and pepper to taste

Directions:
Directions:
Cube the meat and set aside. In a large, heavy skillet, saute onion in butter until onion starts to soften. Add mushrooms and continue cooking until mushrooms are nicely cooked. Add spinach and cream cheese and stir until combined. Add cream and heat through. Pour sauce over pasta (Penne works really well), garnish with fresh grated Parmesan and serve.
