"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

3 1/3 c flour
3 c sugar
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
14 oz can pumpkin
1 c vegetable oil
4 eggs
2/3 c water
1/2 c chopped nuts (I have substituted fresh cranberries for nuts and it is delicious)

For Glaze:
1 c butter
1/4 c sugar
1/4 c brown sugar
1/4 c cream
2/3 c powdered sugar
1 tsp vanilla

Combine dry ingredients in large bowl. In another bowl mix remaining ingredients. Pour into dry ingredients and mix. Pour batter into 2 greased bread pans until pans are about 2/3 full. Bake at 350 for 60 - 65 minutes or until toothpick inserted in bread comes out clean. Cool 10 minutes before removing from pans. You MUST make this Caramel Glaze!! Glaze cooled loaves.

Caramel Glaze:

Dissolve sugars with butter and cream. Cool for 20 minutes. Add powdered sugar and vanilla. Drizzle (or in my case, pour) over loaf tops and enjoy!!!
