3 c flour
1 Tbsp + 2 tsp pumpkin pie spice
2 tsp baking soda
1½ tsp salt
3 c sugar
15 oz can Libby's 100% pure pumpkin
4 large eggs
1 c vegetable oil
½ c orange juice
1 c Craisins (optional but good)
Semi-chopped walnuts (optional but good)

Directions:
Directions:
Combine flour, spice, baking soda and salt in a LARGE bowl. Combine sugar, pumpkin, eggs, oil and juice. Add pumpkin mix to flour mix. Fold in Craisins and nuts. Spoon into 5 greased and floured mini loaf pans or two large bread pans. Bake at 350º for 50 - 55 minutes.

These are great breads and you can make some with Craisins, some with walnuts or whatever you like. They make 5 mini loaves and are great for sharing. I make for Christmas and give to people. They are really good.
