2 large bananas, smashed 1/4 c warm water 1 tsp soda 1/4 tsp salt 2 scant c flour 1 egg 1 c sugar 1/2 c butter 1/2 c chopped walnuts (optional)
Cream butter with sugar and egg. Beat until fluffy and light. Sift together flour and salt. Add to creamed mixture. Mix well. Dissolve soda in warm water and add to mixture. Blend in mashed bananas and walnuts. Bake in well-greased bread pan at 325º for 1 hour. Let stand 5 minutes before removing from pan.
