3 eggs beaten
1 cup oil
2 cups sugar
2 cups chopped zucchini (leave skin on)
1 teaspoon vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
ľ teaspoon baking powder
Ĺ cup chopped walnuts (optional)

Blend oil and sugar together and add to beaten eggs. Add chopped zucchini to mixture. If using electric mixer, beat on low speed just to mix well. Add remaining ingredients and mix well. Fold nuts in last if you choose to use them. Pour into 4 small bread pans or 2 large ones. Bake at 325 degrees for 60 minutes.
