2 tbl. olive oil
1-1/2 lb. chicken tenders
3 cloves garlic, chopped
1 green pepper, seeded and chopped
1 large onion, chopped
1 jalapeno, minced
2 celery ribs, finely chopped
1/2 tbl. ground cumin
2 c. yellow corn tortilla chips
2 tbl. hot sauce
1 quart chicken stock

Preheat a soup pot over medium heat and add the olive oil. Chop the chicken tenders into bite size pieces, add to hot soup pot. Lightly brown the chicken for 3 - 4 minutes, then add the garlic, peppers, inions, jalapenos, celery, cumin and salt and pepper. Contine to cook for 3 minutes, stirring frequently.

While soup is simmering, place the tortilla chips in a food processor and process until well ground - or place in a plastic bag and crush with a rolling pin. Add the crushed tortilla chips to the soup pot and stir to combine. Add the chicken stock and bring the soup to a simmer and simmer for 15 minutes -

Can be topped with sour cream, lime zest and scallions, if desired.
