Ingredients:  
2 cups shredded zucchini with skin,
2 cups sugar,
1 cup cooking oil,
3 eggs,
1 tsp. vanilla,
3 cups flour,
1/4 tsp. baking powder,
1 tsp. baking soda,
1/2 tsp. salt,
1 tsp. ginger,
1/2 tsp. ground cloves,
1/2 cup nutmeats,
1/2 cup raisins

Directions:
Directions:
Combine sugar, oil, eggs and vanilla, stir in zucchini,
Sift dry ingredients together and blend into mixture,
Stir in nut and raisins,
Pour into two 5x8 loaf pans.greased
Bake at 325 for 1 hour or until done.
cool 20 minutes before removing from pan.
This bread freezes well.
