2 cups sugar
2 cups flour
1 1/2 cups oil
2 tsp baking powder
4 eggs
2 tsp cinnamon
2 1/2 - 3 cups grated carrots
1 cup chopped pecans


Icing:

8 oz cream cheese (softened)
1 stick butter
2 tsp vanilla
1 box 10X sugar

Directions:
Directions:
Mix the sugar oil and eggs. Combine the flour, baking powder and cinnamon; then add to egg mixture and blend. Add the carrots and blend; then add pecans and blend.
Bake at 350ºF:
(3) 8" rounds 45 minutes
(2) 9" rounds 50 minutes
Tube pan 60 minutes

Icing: Blend ingredients well. Ice cake when cooled.
