1 cup shortening,
3/4 cup light brown sugar, firmly packed,
3/4 cup granulated sugar,
2 eggs,
1 1/2 cups sifted flour,
1 tsp. baking soda,
1 tsp. salt,
2 cups quick cooking oatmeal,
1 tsp. vanilla,
1 cup walnuts.

Directions:

Heat oven to 375. Lightly grease cookie sheets. Sift flour with baking soda and salt. Mix shortening, sugars, eggs and vanilla until light and fluffy. Stir in flour mix, oatmeal and walnuts. Drop on cookie sheets by slightly rounded tsp. 2 in. apart. Bake 10 - 12 min. Let cool.
