1 box of Uncle Ben's Wild Rice (Original Recipe) 1 can of black beans (rinsed and drained) 1 can of kidney beans (rinsed and drained) 1 can of pinto beans (rinsed and drained) 1 red bell pepper (chopped) 1 bunch of green onions (green parts only, chopped) 1 Tbs of ground cumin 1 16oz bottle of Wishbone Italian Dressing
Marke rice according to the directions. Add the rest of the ingredients EXCEPT for the dressing. Mix thoroughly but gently. Pour about 3/4 of the bottle of dressing onto the salad and mix again. Chill for several hours. If it seems to dry, you can add more dressing.
This is another one of those that is great to make a day ahead of time. The longer it sits, the better it gets.
