3 large soft shell tacos
1 onion
2 tomatos
1 can refried beans
1 8oz package of cheese
3 tbsp of vegetable oil
4oz of scallions
1 can of sliced olives
1 green or red pepper (optional)

Directions:
Directions:
Heat oven to 325. Cut quesidillas like pizza slices, into 6 pieces per quesidilla. Glaze both sides of soft shell tacos with oil, place on bottom of cassarole dish. Chop up all vegetables and layer on quarter of the dish. Add another layer of oil glazed soft shell tacos. Add more vegetables. Repeat until tacos are layered on the top, sprinkle with cheese. Bake for 15-20 minutes, until cheese is melted. Serve with sour cream.
