Ingredients:  
3 egg yolks
1 1/2 - 2 tablespoons lemon juice
1/4 teaspoon salt
pinch of cayenne pepper
1 stick butter

Directions:
Directions:
Place all ingredients, except butter, in blender. Heat butter in a small saucepan until foaming hot. Cover blender and run at top speed for 2 - 3 seconds. Uncover, Still blending at top speed, start pouring in hot butter in a slow steady thin stream of droplets. Do not use milky residue at bottom of butter pan. Taste sauce and adjust seasonings if necessary. If not used immediately, set sauce in jar in warm water. Makes about 3/4 cup.

This is so easy that one should never uses a powdered mix for hollandaise - it's gross.
