4 chicken breast
1 small onion, finely chopped
1 can (8 ozs.) tomato sauce
1 egg, diluted with 1 T. of water
1 c. flour, divided
1 c. chicken broth, or bouillion
2 T. butter
1 tsp. garlic powder
salt & pepper

Directions:
Directions:
In a large saute pan, heat about 2 T. of oil. Season the chicken breasts on both sides with salt and pepper. Dip them in the egg mixture and then in the flour, saving 1-2 T. for later. Cook on both sides until golden brown. Remove and drain on paper towel. In the same saute pan, cook the onion until translucent but not browned. Add the tomato sauce, 2/3 c. of broth, and garlic powder. With the remaining broth, combine with 1-2 T. of flour used to coat chicken to create a slurry. Add the slurry to the other liquids and heat through. Let simmer for about 3 minutes. If desired, you may mix in a blender to make it smooth. Return the chicken to the gravy and let cook until chicken is done, about 6 minutes more. Remove chicken and put on dinner plates. Add the butter to the gravy and stir until melted. Pour gravy over chicken and serve.
