Ingredients:  
1 large turkey (or chicken) carcass
3 cans chicken broth (or enough water to
cover carcass plus a boullion cube)
bay leaf
1 c. chopped celery
1 c. thinly sliced carrots
1 c. rice
salt and pepper

Directions:
Directions:
Place turkey carcass in large soup pan, add chicken stock and bay leaf and bring up to to a boil, reduce heat and simmer until the turkey meat is falling of the bone.

Remove the turkey carcass and take off all remaining meat on the bones - add meat back into the soup.

Skim any visible fat off the top of the soup.

Add the carrots and celery and simmer until they are soft -

Add the rice and simmer 5 more minutes - season with salt and pepper and serve.
